Nutmeg is the seed kernel of the Myristica fragrans tree, the same fruit that gives mace from its red aril; the seed is rich in nutmeg butter and a sabinene-led volatile oil. Nutmeg oleoresin gives processors the warm, sweet nutmeg note in liquid form, avoiding the clumping and uneven dispersion of the fat-rich ground spice. Solvent extraction followed by solvent recovery concentrates the volatile oil and the non-volatile flavour fraction into a dose-efficient liquid that replaces ground nutmeg in processing. Naturally occurring constituents include sabinene, myristicin, α-pinene and safrole. It is used in bakery, desserts, dairy, meat products, beverages and spice blends.
