Ginger oleoresin carries both the pungent gingerols, which partly convert to sharper shogaols as the rhizome is dried, and the zingiberene-rich volatile oil that gives fresh-ginger lift. It is widely used to put both ginger pungency and aroma into beverages and baked goods, and its grade is set by volatile-oil or gingerol content. Extraction with ethyl acetate followed by solvent recovery concentrates the volatile oil and the non-volatile flavour and pungency fraction into a dose-efficient liquid, with residual ethyl acetate specified at not more than 50 ppm. Naturally occurring constituents include gingerols, shogaols and zingiberene.
