    About This Oleoresin

    Celery Seed Oleoresin is a full-spectrum, solvent-extracted oleoresin of Apium graveolens seed, supplied as a free-flowing, dark greenish-brown liquid. Celery seed is the small fruit of Apium graveolens; its characteristic celery note comes from phthalides, which carry the aroma at very low levels alongside a limonene-rich volatile oil. Celery seed oleoresin is a standard savoury-flavour raw material because a small dose gives a strong, rounded celery note that ground seed delivers only at much higher inclusion. Extraction with hexane followed by solvent recovery concentrates the volatile oil and the non-volatile flavour fraction into a dose-efficient liquid, with residual hexane specified at not more than 25 ppm. Naturally occurring constituents include limonene and the phthalides sedanolide and 3-n-butylphthalide. It is used in soups, sauces, sausages, processed vegetables, seafood and beverages.
