    About This Oleoresin

    Ginger Oleoresin is a full-spectrum, solvent-extracted oleoresin of Zingiber officinale rhizome, supplied as a free-flowing, dark yellowish-brown liquid. Ginger oleoresin carries both the pungent gingerols, which partly convert to sharper shogaols as the rhizome is dried, and the zingiberene-rich volatile oil that gives fresh-ginger lift. It is widely used to put both ginger pungency and aroma into beverages and baked goods, and its grade is set by volatile-oil or gingerol content. Extraction with ethyl acetate followed by solvent recovery concentrates the volatile oil and the non-volatile flavour and pungency fraction into a dose-efficient liquid, with residual ethyl acetate specified at not more than 50 ppm. Naturally occurring constituents include gingerols, shogaols and zingiberene. It is used in beverages, confectionery, bakery, sauces and savoury products.
