    About This Oleoresin

    Mustard Oleoresin is a full-spectrum, solvent-extracted oleoresin of Brassica juncea seed, supplied as a viscous, deep reddish-brown to dark brown liquid. Brown mustard seed is mild until it is crushed with water, when the enzyme myrosinase converts the glucosinolate sinigrin into allyl isothiocyanate — the volatile, nose-stinging pungency of mustard. Solvent extraction followed by solvent recovery concentrates the volatile oil and the non-volatile flavour and pungency fraction into a dose-efficient liquid that replaces ground mustard in processing. Naturally occurring constituents include allyl isothiocyanate (AITC), formed from sinigrin on hydrolysis. It is used in sauces, dressings, pickles, condiments and meat products.
