Oleoresins: Full-Spectrum Spice Extracts for Food, Flavour and Colour
An oleoresin is the full-spectrum solvent extract of a spice or herb. It carries the volatile oil, which is the aroma, together with the non-volatile fraction: the pungent principles, resins, pigments and lipids that ground spice contains but a distilled essential oil does not. Processors use oleoresins in place of ground spice to dose flavour, heat or colour by weight, as a liquid that disperses evenly and leaves no visible specks.
Every oleoresin in this collection is solvent-extracted, with the solvent recovered after extraction. Botanical name, plant part, grade and process are stated on each product page, and every order ships with a per-lot CoA and SDS.
Aroma spices: volatile-oil grade
Cardamom, clove, cassia, mace, cumin and similar spices are sold by volatile-oil content, which sets aroma strength and dosage.
Heat and colour: pungency or colour-value grade
Capsicum is sold by capsaicin content, paprika by colour value (CU) and turmeric by curcumin. Where a product is sold in more than one grade, each grade is listed as its own product.
Handling
Several oleoresins — capsicum, green chilli and mustard in particular — are strong irritants. Handling and regulatory detail is on the SDS supplied with every order.

Blenders plate oleoresins onto a dry carrier such as salt, dextrose or maltodextrin to build seasonings, setting flavour and heat by weight and adjusting dose to the value on the per-lot CoA. Specify the grade and the carrier you plate onto at enquiry.
Flavour Houses & Colour Users
Flavour houses use oleoresins as building blocks in savoury, bakery and beverage flavours. Paprika and turmeric oleoresins are used as colour sources and are regulated as colour additives where they colour food. State your application and target market at enquiry.
